[Recipe] Nutritious pot-au-feu with the gentle sweetness of beets

Perfect for busy days. Just simmer this dish and it will soothe your body and mind.

"I want to make a quick and nutritious meal today." An easy pot-au-feu made with boiled beets is perfect for times like that.

All you have to do is cut the ingredients, stir fry, and simmer. With the standard vegetables you have in your fridge and the gently sweet beets, you can make a colorful soup that your kids will love.

It's filling, yet easy to eat and has no strong flavor. It's a staple soup in our house that can be enjoyed any time of the year, perfect for breakfast, lunch, or when you're feeling a bit hungry.

Beetroot pot-au-feu [serves 2-3]


【material】

<Meat>
・Sausage…80g

<Vegetables>
・1 pack of boiled beets・1 potato・1/2 carrot・1/2 onion・1/3 celery (stalk)

<Seasonings>
・Water…300ml
・1 consomme cube ・1 and a half teaspoons of sugar
・Salt and black pepper... appropriate amount *Oil for frying (not included in the amount)... a little

Finishing touches (optional)
Dried oregano... appropriate amount

【How to make】

1. Preparing the vegetables <br> Peel the potatoes, carrots, onions, and celery, and cut them all into bite-sized pieces. Cut the sausages into bite-sized pieces as well.

2. Stir-fry <br> Add oil to a pan and heat over medium heat, then add the cut vegetables and stir fry for about 3 minutes. When the oil is absorbed throughout and the vegetables start to smell fragrant, it's ready.

3. Simmer <br>Add water, boiled beets (including the juices), sausage, consomme, and sugar, and once boiling, reduce the heat and simmer for 10 to 15 minutes.

4. Season to taste <br>Once the vegetables are soft, season with salt and black pepper, and add oregano to taste.
*If the flavor is too strong, add water; if it is too weak, adjust with salt.


Tips on how to enjoy it
: <br>My preference is to eat it with rice, like curry rice lol, but you can also eat it with bread for breakfast. It would also be good for lunch with cheese on toast. You can vary it with the vegetables in your fridge. It's also delicious with broccoli or corn.
